Spinach and Goat Cheese Frittata

A while back I was craving spinach...thought I'd make a spinach first.
I decided to throw in a few cooked red sliced potatoes
and then I had some wonderful Point Reyes goat cheese...added, flipped and threw in the oven
It was so very good....light, fluffy...perfecto. A nice bkfst for several days. Great cold!

Hi Mel, I'm catching up on my reading and now drooling over your wonderful cooking. (I LOVE goat cheese and will be making this frittata soon!) It all looks fantastic. So glad your fund raiser went well!
