Sundays with Marlena Spieler-Eggs & Lox with Chives


Simple and perfect..especially with a slice of toasted rye sourdough, pumpernickel, or bagels. Lox is cured and smoked salmon..in case ya didn't know. I love to say it...lox. It's like a 2 year-old saying , "me want lox of toys".

Ingredients: Serves 4 people... who eat like birds

3 tbsp unsalted butter
5 oz of lox
a small bunch of chopped chives or use the green part of spring onions
a small bunch of chopped parsley
8 eggs lightly beaten with a fork or whisk
salt and pepper to taste

put half of the butter into a non-stick heated pan
add the salmon
pour the eggs into the pan and stir until soft curds form then add the remaining butter
take pan off of heat and stir gently until the eggs are done but still soft and moist
season with a touch of salt and pepper
garnish with the chives and parsley
I like to add hot sauce to my eggs. :)

I could eat these light, airy, delectable eggs every single day.
