
I defatted (is that a word?) the juices and have some great gravy starter now!

I always stuff it with 1/2 a lemon, 1/2 an onion, and some rosemary sprigs.

Mmmmm....yummy! I love roasted chicken. It's such a comfort. And so versatile. Hmmm...think I might have to roast one tonight. That sounds perfect on this dreary cold day!
That is a perfect chicken. I stuff mine the same...with lemon, onion and rosemary!
